膳食纖維很多時都是對蔬菜的既定印象,但並不等於只含有膳食纖維,尤其根莖類的蔬菜,因富含碳水化合物,可用作取代穀物類作為澱粉的主要來源。
當中所含的複合碳水化合物,比較簡單碳水化合物的分解和吸收時間較長。雖然升糖指數較低,但亦不建議大量進食,否則容易因攝取大量澱粉而導致體重增加。

Vegetables are often giving us an impression of a source of dietary fibre, but it does not mean dietary fibre is the only nutrient obtained. Root vegetables, in particular, are rich in carbohydrates and can be used to replace grains as the main source of starch.
The complex carbohydrates contained in root vegetables take longer to digest and absorb than simple carbohydrates. Although the glycemic index is generally lower in complex carbohydrates, it can lead to weight gain with large intake of starch.
