隨著天氣越來越熱,良好的食物處理習慣變得尤其重要。 然而,溫度只是導致食物中毒的潛在因素之一,養殖和耕種過程、交叉污染、該植物或動物的生長習性亦應了解。


徹底清洗食材,去除雙殼類貝類中的大部分內臟,並在高溫下烹煮可以去除大部分的污染物和潛在毒素。 然而,一旦食材受到沙門氏菌污染,就難以單透過清洗或擦掉表面上的沙門氏菌。

甲型肝炎病毒在環境中的存活率很高,並可能於新鮮食材變壞後仍然能存活;以食水清洗新鮮農產品只能去除部分病毒,若食材的污染程度很高仍可能會受污染。

Don't Overlook Food Safety Matter

Good food handling practice becomes more important while the weather is getting hotter and hotter. Yet temperature is just one of the potential factors to cause food poisoning, farming process, cross-contamination, the nature of the plant or animals should also be put into consideration.


Wash ingredients thoroughly, remove most organs that in bivalve shellfish and and cook under high heat can remove most of the contaminants. Yet, it is particularly hard to remove all the surface bacteria including Salmonella by washing the fresh produce.


💡Friendly reminder

Hepatitis A Virus (HAV) has a survival rate in the environment and may outlast the shelf life of fresh fruits and vegetables. Although washing fresh produce under potable water can only remove some of the virus, infection is still possible if the contamination level is high.
