多環芳香族碳氫化合物(PAHs)是眾所周知的其中一大類能引致癌症的化學物質的統稱,生活上實際存在過百種這類具親脂性的化學物質,存在於空氣、泥士、水、食物、色素、染料、煤、油、廢氣及香煙煙霧等。


PAHs會透過胃腸道被身體吸收,分布於身體各部分,亦會經過新陳代謝形成活性代謝物,與DNA結合變成共價加成化合物,而這正是被認為是化學致癌物質的最初階段;當然,有部分亦會轉化成體外的生成物。

【How Much Carcinogen Does Barbecued Meat Contain?】

Polycyclic Aromatic Hydrocarbons (PAHs) is one of the well-known large groups of carcinogens. There are actually hundreds of such lipophilic chemical substances that appear in our life, which exist in air, mud, water, food, pigments, dyes, coal, oil, exhaust gas and cigarette smoke.


PAHs are absorbed through the gastrointestinal tract when ingested, and are distributed throughout the body. They also undergo metabolic transformation to active metabolites that bind to DNA to form covalent adducts, which are initially considered to be closely related to the carcinogenicity of PAHs. Meanwhile, some of the PAHs are excreted as waste materials.
