Speaking of hotpot, some high fat or fake soy products are likely to be assumed as healthy food. Do you know how to classify them?
Dried bean curd that undergoes extra dehydration is rich in protein, and contains less than 5g of fat per 100g. The density of dried bean curd, firm and soft tofu is relatively higher than other soy products like bean curd puff or Bai ye tofu, so as to absorb less amount of oil and broth. Meanwhile, these soy products provide isoflavones which have anti-inflammatory and anti-oxidation properties.
Although soybean roll, tofu curd sheet, bean curd puff and frozen tofu are soy products, their fat contents are much higher than firm and soft tofu due to the deep-frying or frozen process which makes them easily absorb oil from the broth. This may result in edema and interfere with detoxification.
Bai ye tofu, fish bean curd and egg tofu are made of soy protein and soybean oil, fish paste and egg, which are not considered as soy products. Besides, , the fat content of Bai ye tofu is triple the amount of traditional tofu, as soybean oil is the main ingredient. Hence the total calories and fat content is greatly increased when it cooks in the broth.
