人體主要透過日光照射後在皮膚表皮的下層的化學反應合成維生素D。維生素D屬脂溶性維生素,可促進鈣的吸收、調節骨骼生長並在免疫功能中發揮作用。因此,烹煮含維生素D或其他脂溶性維生素時,可適當使用少量油脂烹煮可更有利維生素的釋出。

The human body mainly synthesises vitamin D through chemical reactions in the lower layer of the skin epidermis after sunlight exposure. Vitamin D is a fat-soluble vitamin that promotes calcium absorption, regulates bone growth and plays a role in immune function.
Add a small amount of oil in cooking to facilitate the release of vitamin D or other fat-soluble vitamins.
