【蔬菜中的硝酸鹽含量】
硝酸鹽天然存在於環境的四周、空氣、農作物和水,亦可用作乳酪製品和醃製肉類的防腐劑;而不同種類的蔬菜中所含的硝酸鹽會因種植、儲存環境和加工影響,其含量可由1毫克/公斤(如豌豆)至超過4000毫克/公斤(如芝麻菜)。一般而言,食物中的硝酸鹽含量對成人來說是可以安全食用的。
💡 硝酸鹽本身可說是沒有毒性的,但會於人體內可轉化成亞硝酸鹽,可會導致正鐵血紅蛋白血症和癌症,尤其不足4-6個月的初生嬰兒或患有蠶豆症(G6PD)人士的風險較高。

【Nitrate Content In Vegetables】
Nitrates can be naturally found in the environment, including air, fresh produce and water, and can also be used as a preservative in cheese products and cured meats. The contents of nitrates contained in different types of vegetables can be affected by growing conditions, storage and processing, ranging from 1 mg/kg (such as peas) to more than 4000 mg/kg (such as rucola). Generally speaking, the levels of nitrates in foods are safe for adults.
💡 Nitrate itself is non-toxic, but it can be converted into nitrite in human body, which can cause methemoglobinemia and cancer, especially for infants less than 4-6 months of age or people with glucose-6-phosphate dehydrogenase (G6PD) deficiency are at higher risk.
